Requirements for Fresh Potatoes:
In order to produce the potato chips that consumers know and love, potatoes used in the snack food processing line must meet specific requirements.
The diameter should be between 40-60mm, and the potato itself should be a fairly regular size (larger than a golf ball, but smaller than a baseball).
White potatoes work best, and they should have a deoxidized sugar content of less than 0.2%.
Before using the potatoes, they should be placed in storage in a room that is kept around 12-18°C, and must last for a week with no spoiling or loss of freshness.

Introduction to the Main Process

2. Washing and peeling machine
This peeling machine has 8 rollers, 4 brushers and 4 stone brushers. Also has water in peeling process to washing the potato.
This slicer has big capacity, cut potato chips smoothly and good quality.
4. Picking conveyor
This conveyor is used for pick out the broken potato and not peeled potato. The not peeled potato go back to peeling machine again.
This vibrator can distribute the potato chips and remove the excess water on surface.
6. Bubble washing machine
The bubble washing machine is used to wash potato starch and keep it from falling into the oil in order to preserve the service life of the deep fryer. Potato chips are completely immersed into water to keep them from browning so that the final chips are still crisp golden color.
7. Balnching machine
The blanching machines has hot water 65-90℃. It destroy enzyme activity and improve and soften the chips for drying and blister prevention, in order to preserve the color, sodium hydrogen sulfite or sodium pyrosulfite is added.
8. Frying machine
The frying machine is full automatic, keep the potato chips with good color and crisp taste. Potato chips are fried for 2-3 minutes at temperature 170℃-180℃.
9. Flouring machine
This flouring machine can add flour equably and automatically , make the potato different taste with different flour.
10. Packing machine
The packing machine has 10 heads or 14 heads weight and packing machine. It can pack each bag potato chips same weight with nitrogen.
Bubble Washing Process: The bubble washing process is used to wash potato starch from the potato chip and keep it from falling into the oil in order to preserve the service life of the deep fryer. Potato chips are completely immersed into water to keep them from browning so that the final chip is still the crisp golden color.
Blanching Machine: After washing, the potato chips are transported to the blanching machine, which holds hot water that is about 65-90°C. This destroys enzyme activity, and improves and softens the chip for drying and blister prevention. In order to preserve the color, Sodium Hydrogen Sulfite or Sodium Pyrosulfite is added.
Frying Machine: The potato chips are fried for 2-3 minutes at a temperature of 170-180°C.
Frying Oil: The frying oil should not have a high acid value, and should be stable. Ideal oils most potato chip production lines use include rice oil, palm oil or hydrogenated oil. All 3 leave behind very minimal oily taste.
